Production Notes
Whole berry destemming, 3 day cold soak, punch downs once per day. Roussanne and Clairette Blanche pressed to tank prior to fermentation. Roussanne barrel fermented, Clairette Blanche fermented in stainless steel. Grenache Blanc, Picpoul Blanc, and Bourboulenc whole cluster pressed and stainless steel fermented for 14 days in temperature controlled tank. Barrel aged 5 months in 12% new French oak and balance in neutral French oak and stainless steel barrels. Malolactic fermentation blocked.
